It started with a childhood memory. Growing up, Uncle T watched his Aunt make viande séchée for the whole family. He loved everything about it — the patience, the process, and most of all, that first bite of perfectly dried beef. It was the kind of food that stayed with you.
Years later, living in the city, he found himself craving that taste again. There was just one problem: he didn't have his Aunt's traditional setup or the proper tools to make viande séchée the way she did. So he improvised.
He took his Aunt's recipe, the techniques he'd grown up watching, and combined them with his favorite food: beef jerky. After countless batches, adjustments, and a healthy amount of family opinions, Uncle T's recipe was born.
Today, we still make it the way he believes it should be made — by hand, with patience, and with a little bit of family tradition in every bite.
Because sometimes the best recipes aren't invented. They're remembered.
